How long does deli meat last

FoodSafety.gov prints an opened pack and store-sliced meat at 3–5 days in the fridge. An unopened package is 2 weeks. The freezer is 1–2 months on both rows. The ministry’s deli line is also 1–2 months in the freezer; the windows match, so there is no second line. The bold number is the short end of the range. Bacon has its own page.

Months in the freezer column are about quality. USDA says food held continuously at −18°C (0°F) stays safe; the ministry also notes that freezing does not kill bacteria.

Best way to store it

Keep an opened pack and a store-sliced piece in a closed box, on an inside shelf at 4°C (40°F). The door warms up every time it opens. FoodSafety.gov caps this state at 3–5 days. The bold number is three days. Meat that waited at the counter and a pack you opened at home share that row. A sooner date on the pack wins. Date types are on the use-by and best-before guide.

A pack still sealed at the plant is 2 weeks. The moment you open it, that row ends and the opened row starts. The counter is not safe for either. Sliced salami, smoked turkey, and ham live on this page. Raw sucuk and fresh sausage are on the sausage page.

Get perishable food into the fridge within 2 hours of cooking it or bringing it home, and within 1 hour if the kitchen is above 32°C (90°F). USDA FSIS and Turkey’s Ministry of Agriculture and Forestry both publish that cutoff. A closed deep pot stays warm; a shallow box cools.

A chart is a window, not a verdict on the container in your hand. A sour smell, a slimy surface, or mould means it is finished, even on day one. This page is not medical advice.

Signs it has spoiled

  • A sour, sweet, or ammonia smell. Smoke on its own is not that.
  • A sticky or slimy surface. Do not rinse the slices to check.
  • Mould. Do not trim the edge and carry on.
  • A colour shift together with sourness. A slight darkening on its own, with no smell, does not decide ahead of the chart.

If the pack is swollen or the liquid is cloudy, that pack is finished.

Freezing and thawing

Separate the slices with greaseproof paper, press out the air, and freeze them closed. FoodSafety.gov prints 1–2 months for opened deli meat in the freezer. On the unopened row the ministry prints 1–2 months. They are the same window. The bold number is one month. The months are not a safety date. USDA says food held continuously at −18°C (0°F) stays safe, and the ministry notes that freezing does not kill bacteria.

Thaw in the fridge. Do not refreeze a slice that has thawed. Listeria can grow in the cold; freezing does not erase that risk. If someone is at higher risk, bring the thawed slice to 74°C (165°F).

Thaw in the refrigerator, not on the counter. Do not refreeze a portion that has thawed. The ministry states the same rule: thaw frozen food in the fridge and take out only what you will eat.

Myths and facts

  • An opened pack still keeps for two weeks. Two weeks, 2 weeks, is the unopened pack. Once opened, the row is 3–5 days.
  • Freshly sliced at the counter means it keeps longer. FoodSafety.gov puts store-sliced meat on the same row as an opened pack.
  • The freezer month is a use-by date. 1–2 months is a quality window. The ministry prints the same window.

When someone is at higher risk

The windows assume a generally healthy household. Pregnancy, young children, older age, or a weakened immune system are reasons to keep the shorter figure, to skip raw or undercooked food, and to reheat leftovers until the centre is steaming. USDA’s figure for reheating leftovers is 74°C (165°F).

A deli slice can carry Listeria even when the pack looks sealed. In pregnancy, for young children, in older age, or with a weakened immune system, do not eat the slice cold. Bring it to 74°C (165°F); steam on its own is not the measure this page uses, a thermometer is. Heating a mouldy pack does not undo mould. Do not sort a doubtful slice by tasting it.
