How long do leftovers last in the fridge

Cooked food has no printed date. The clock starts when the meal leaves the heat, and a short list of habits decides whether Thursday’s stew is still the plan for Sunday.

A leftover has no use-by stamp. The day that matters is the day you cooked, or the day the takeaway box came home. Food-safety agencies publish one familiar fridge window for most cooked food: about 3 to 4 days, if it was cooled promptly and kept cold. That figure is general guidance, not a verdict on the box in front of you. When in doubt, throw it out.

About 3 to 4 days, with a shorter line in some countries

Charts from the U.S. Department of Agriculture group most cooked leftovers together. Cooked meat and poultry, soups and stews, pizza, and many mixed dishes are listed at 3 to 4 days in the refrigerator. The same pages say to refrigerate within 2 hours of cooking, or within 1 hour if the room is above about 90°F (32°C). A shallow box cools faster than a deep pot with the lid on.

The UK Food Standards Agency and the NHS commonly say eat refrigerated leftovers within 2 days, and treat rice as shorter still. Follow the shorter window if that is the guidance where you live. This page is not medical advice and cannot call one portion safe. A shop date on the raw meat is a different clock: once you cook it, the tray date stops being the one that matters. That split is in use-by versus best-before, and in shorter form on the guide to the two dates.

Cooked meat, rice, soup, pizza, seafood, takeout

The row is a reminder, not a certificate. Food that sat out through lunch does not get the full window. Food that smells sour on day 2 does not wait for day 4.

Roasts, chilli, meatballs, and casseroles sit on the 3 to 4 day line. Cut large pieces so the centre cools. Pasta with meat or a cream sauce uses that same clock, not the quality date on the dry bag.

Rice is the exception agencies name. Cooked rice left warm can give bacteria time to grow, so the UK Food Standards Agency tells people to cool it within about an hour, refrigerate it, eat it within a day, and reheat it only once until steaming hot.

A pot of stew fails when the whole pot goes into the fridge. Ladle it into shallow boxes, let the steam drop, then lid it. Cooked vegetables are leftovers too: not a sealed bag of frozen peas, and not a raw carrot with a shop date. Pizza charts say about 3 to 4 days. Slices left out overnight are not a special case. Refrigerate them and write the day on the box.

Cooked fish and shellfish are often listed at 3 to 4 days, with less patience for a warm afternoon. A sour or ammonia smell means throw it out on day 1. Raw fish still follows the short date on the pack. Cooking does not stretch that date. Takeout follows the same rules, and the ride home counts. Food that was lukewarm through a film never had 3 to 4 days. Split a large order the way you split a stew.

Cool it quickly, then seal and label

Speed, a shallow container, a lid, and a date. Refrigerate within the 2 hours agencies cite, or 1 hour in hot weather. Do not leave a pot out until morning. Cold water in the sink, a stir, or a second box speeds the start. Close the lid once the steam has dropped. An airtight box beats foil, and foil beats an open plate.

Write the cook date on the lid. In a tracker, save the last day you mean to eat it: cook date plus 3 or 4 days, or plus 2 if that is your local guidance. The app stores the day you confirm. It does not decide the food is safe. Keeping that day at the top of a list is what tracking expiry dates is for.

Freezing, and how long quality holds

Freeze what you will not eat inside the fridge window, while you still trust it. USDA guidance treats food held frozen as staying safe, and treats the months in the table as quality: taste and texture fade. Label the box with the name and the day. Thaw in the fridge, eat it inside the same short window, and do not freeze and thaw the same portion over and over.

Reheat once, and reheat thoroughly

Heat leftovers until they are hot all the way through. The USDA figure people quote is 165°F (74°C) in the centre. UK guidance says steaming hot throughout. Bring soups, stews, and gravies to a boil and stir. Reheat once. The Food Standards Agency is plain about that, especially for rice. Take the portion you will eat and leave the rest cold. Do not microwave, cool on the counter, and microwave again tomorrow. An unfinished reheated plate goes out, not back into the cold box. Stir halfway and check the centre: the edge can scald while the middle is still cold.

Signs to throw it out

Sour or odd smell, a slimy film, sauce that looks fizzy, visible mould, or a colour that has clearly changed: throw it out. So is a box that sat out past the commonly cited 2 hours, even if it still looks normal. Do not taste a doubtful portion to decide. If you cannot remember the cook date, it is already in the “when in doubt” pile. Eating what is still inside the window, before you cook the same meal again, is the other half of wasting less: how to waste less food in the fridge.

The day worth saving

A date on a jar and a cook date on soup do different jobs. Save “stew, eat by Friday”, not the day you opened the stock. The useful reminder is that last day. Mark a portion eaten or thrown away so the next shop does not replace food still in the fridge. The app will not sniff the box. Food that is off still goes out.

Questions people actually ask

How long do leftovers last in the fridge?

Most cooked leftovers are commonly cited at about 3 to 4 days, if cooled within about 2 hours and kept cold. Some agencies, including the UK Food Standards Agency, say within 2 days. Rice is often 1 day. When in doubt, throw it out.

How long do leftovers last in the freezer?

Chart months are about quality. Cooked meat dishes are often listed around 2 to 6 months, soups around 2 to 3, pizza around 1 to 2. Freeze while the food is still inside its fridge window, and thaw in the fridge.

Can I reheat leftover rice?

Only if it was cooled quickly, refrigerated, and not reheated already. Several agencies say use cooked rice within a day and reheat once until steaming hot. Rice left warm does not become fine because the microwave is hot.

Is day 4 still all right?

On a USDA-style chart, day 4 is the edge of the window, not a day past it. If local guidance says 2 days, day 4 is already outside that advice. Sour smell, slime, mould, or a forgotten date means throw it out.

What day should an expiry tracker store?

The day you mean to finish the leftover, from the cook date and the window you follow. Label the box with the same day. The tracker reminds you. It does not decide the food is safe.
